7 for SEVEN

7 for (1)

Hellooo Loves!

The sun is shining brightly in sweet T&T today! It’s also a holiday. So YAY for long weekends and even shorter work weeks. *cue Frank* Heaven! I’m in heaven!

Here’s my 7 for Seven this week:

Rest & relaxation. My long weekend plans involved church, as it was the Easter Triduum, family because my family takes every opportunity to share food and laugh together, Netflix and lots and lots of sleep. It was frankly the very best way to spend the time.

Potluck lunches. Not only is this a great way to share the load of cooking, but when done right, you can try a new dish like a spicy lentil carailli (car-rye-lee) soup or a veggie lasagna that will make you say who needs meat! I had the absolute pleasure to have shared a really delicious meal amidst great conversation with really happy people.

Affogato. Man add some alcohol infused strawberries and this is coffee all grown up and sexy.

Dinner with the sis. Because even though we speak everyday, dressing up and going out to eat and catching up over a really nice dinner is an extra special treat. Bonus: When she pays!

Seedless grapes. No explanation required!

Instagram challenges that inspire me. Susannah Conway’s April Love project has been inspiring me for the last few days. Her month-long challenge has already generated over 5000 posts. Feel free to join in and spread some love on your timeline.

Planning vacations for the rest of the year. Long weekends are great and all but they are a reminder that more relaxation is needed. Looking forward to my next real vacation!

Cheers to lazy days! They are so few and far between that they seem like an extra special treat when they occur! I hope that by paying attention to all the blessings in my life and by sowing the seeds of faith and gratitude, I can truly carry with me and reap the rewards of “positivity + balance + bliss” throughout the days ahead.

Thank you for reading, I appreciate you! This is me blowing some glitter and confetti on you because you’re super blessed to have received the gift of another 86,400 seconds today, to spend any way you desire.

Make those seconds count!

I love hearing from you…what are you grateful today? What made you smile? Feel free to share below!

Wait..what..what is this alfogato? You soak the strawberries in alcohol and then eat them while drinking fine coffee or you put them in your coffee?

I’m open to new ways to love coffee.

Hi there Kim! I’m so sorry about the late response, I have been MIA for a bit. Affogato which literally means drowned is a simple coffee and ice cream dessert. You put a scoop of ice cream (your choice but I like vanilla and coconut) in a bowl and then you brew an espresso and pour it hot over the ice cream. I tried something a little different by soaking the strawberries in alcohol first and then adding them to the dessert. It made the dessert all the more decadent but it’s fine with just the coffee and ice cream. If you try it please let me know how you found it 🙂

It sounds tasty to me. Thanks. With rhubarb popping up strawberries will soon follow. So many deserts and ways to drink coffee…so little time. 🙂
