Applesauce Overnight Oatmeal

I’m still working hard at getting my cholesterol down and in doing so I’m trying to find ways to incorporate more oatmeal into my diet as easily as possible.

Who ever thought of soaking oats overnight in a liquid of your choice should get some kind of medal. This single serving recipe is almost too easy! You can personalize it to suit your taste, which I think is the best damn thing about it.

1/2 cup old-fashioned oats
1/2 cup milk of choice (I used coconut milk)
1/2 cup applesauce
1/2 teaspoon cinnamon

Combine all ingredients in a seal-able container. Stir the mixture until everything is thoroughly combined. Leave in the fridge overnight (or several hours).

In the morning, enjoy cold or warm up if you wish. I added 1 diced apple to it for some added texture.

Easy-peasy!

    Soaking oatmeal overnight makes it a lot easier to cook in the morning. (Or heat in the microwave). This also works for steel-cut oats and that 7-grain blend I’m fond of. Thanks for the reminder!
